Cheese, Mushroom and Broccoli Stuffed Kumara

Ingredients

4 medium-large kumara
3 tbsp cooking oil
One small head of broccoli chopped into small florets
2 cups sliced mushrooms
One onion, sliced
3 cloves garlic, crushed
4-5 rashers bacon (optional), diced
2 cups grated tasty cheese

Directions

Preheat oven to 180 Celsius and bake kumara for about an hour or until cooked through. Cool then slice in half and scoop out some of the flesh and place in a mixing bowl. While the kumara are in the oven baking prepare the filling: sauté the onion(and bacon if using) in a large pan with the oil. After 10 minutes add the garlic to the pan and stir and then add the mushrooms. Cook for another 10 minutes then add the broccoli (or you can boil the broccoli for a minute if it won’t fit into the pan) and sauté the lot for a few more minutes. Tip into the mixing bowl with the kumara flesh. Season with salt and pepper and mix in the grated cheese reserving some for the top. Stuff kumara shells and top with reserved cheese. Place on a baking tray and bake for about 15 min or until hot and cheese is melted. Serve 1 each as a side dish or 2 each for a complete meal with a salad or vegetable on the side.
