Delicata Squash Pizza

Ingredients

·1 delicata squash, thinly sliced
·1/2 medium red onion, thinly sliced
·2 tablespoons olive oil, divided
·2 cloves garlic, minced
·2 tablespoons shredded basil, plus extra for topping.
·3-4 ounces shredded mozzarella
·1/2 ball whole wheat pizza dough (homemade or store-bought)

Directions

Heat a large skillet over medium-low heat and add 1 tablespoon olive oil. Add in the squash and onion slices, stirring occasionally. Let cook until mixture starts to brown, about 8-10 minutes. Then, add in garlic and cook for 1 more minute. Remove from heat and stir in the basil. Preheat oven to 450˚F. Roll pizza dough out into a rectangle that is roughly 8” x 12”. Transfer to a baking sheet. Brush crust with olive oil, then sprinkle delicata squash mixture evenly over the dough. Sprinkle with shredded cheese, then bake for about 12-15 minutes, or until crust becomes golden and cheese has melted. Garnish with extra basil, then serve and enjoy!
