Grilled Turnips w/ Dill Olive Oil

Ingredients

For the Turnips:
·1-2 turnips, cubed
·1 tablespoon extra virgin olive oil
·½ teaspoon sea salt
·¼ teaspoon black pepper

For the Dill Olive Oil:
·2 teaspoons minced fresh dill
·1 tablespoon extra virgin olive oil
·1 tablespoon fresh lemon juice
·¼ teaspoon salt

Directions

If using wood skewers, soak in water for at least an hour before using to prevent burning. To make the turnips, begin by bringing a pot of water to a boil over high heat. Then, add the turnips and cook for about 2 minutes. Drain, add to a bowl, then toss with the olive oil, salt, and pepper. Preheat the grill to medium-low. Thread turnips onto skewers and grill until lightly charred, about 2 to 3 minutes on each side. To make the dill oil, combine all the ingredients in a bowl and whisk together. Drizzle dill oil over grilled turnips. Then, serve and enjoy!
