Pear and Apple Salad with Roquefort

Ingredients

2 pears, thinly sliced
1 apple, thinly sliced
100 grams Roquefort, crumbled
1/4 cup chopped parsley
2 tbsp. pistachios, roughly chopped
sea salt and cracked fresh pepper, to taste
FOR THE DRESSING:
1/3 cup sour cream
1 1/2 tsp. white wine vinegar
2 tbsp. mayonnaise
pinch of salt
1 garlic, turned to paste
1 cup Roquefort cheese

Directions

Place sliced pear and apple in a bowl of water with a few tablespoons of lemon juice to prevent browning and set aside. In a medium bowl, combine all the dressing ingredients and whisk until smooth. Stack the pear and apple slices. Scatter parsley and pistachios on top and then crumble Roquefort cheese over all. Drizzle dressing and season to finish.
