Sweet Potato Kale Pizza with Red Onion and Rosemary

Ingredients

·Your favorite pizza dough
·1 large sweet potato, sliced ¼” thick
·1/2 red onion, sliced
·1 and 1/2 tablespoons olive oil, divided
·Salt and black pepper, to taste
·1 and 1/2 cups mozzarella cheese
·1 and 1/2 cups chopped kale
·1 tablespoon balsamic vinegar
·1 teaspoon, freshly chopped rosemary

Directions

Preheat oven to 400°F. Place sweet potato and red onion slices in a bowl and toss with 1/2 tablespoon of olive oil. Season with salt and pepper. Place on a large baking sheet and bake for about 20 minutes, or until sweet potatoes are soft and tender. Flip halfway through. Remove from oven and let cool. Meanwhile. turn oven to 500°F or as high as your oven will go. On a lightly floured surface, roll out the pizza dough with a rolling pin to about ¼ an inch. Place pizza dough on a pan that has been generously coated with cornmeal. Lightly brush dough with remaining olive oil. In a small bowl, toss kale with balsamic vinegar. Then, top pizza dough with mozzarella cheese, sweet potato slices, kale, red onion slices, and fresh rosemary. Place the pizza in the oven and bake for 10-15 minutes or until pizza crust is golden and cheese is melted. Remove from oven and let cool for a few minutes before slicing. Slice and serve warm. Enjoy!
